We chose Somni because it encapsulates, without saying it in an obvious way, that deep desire that many people with intolerances have always had: to experience gastronomy with the same freedom, spontaneity and confidence as everyone else. To go to a restaurant without fear, without having to explain, justify or renounce. To be able to choose from pleasure, and not from caution.

But Somni doesn't just speak to those with a dietary condition. It also speaks to those who are looking for a more sensorial, honest and mature experience. It is a word that refers to the intangible, to the emotional, to what goes beyond the plate. It invites you to imagine, to let yourself be carried away...
